Bunny Carrot Cake Pops
Perfect for Easter!
bake a carrot cake
Bake a carrot cake from a boxed mix using half of the mix. Allow the cake to cool.
make a batter with cake and frosting
Crumble the cake with your hands in a large mixing bowl. Add 1 cup of canned frosting to the cake crumbles and mix everything together.
roll batter into balls and chill
Roll the cake mixture into balls and place on wax paper. Chill the cake balls in the fridge for 1-2 hours.
melt almond bark
Melt the almond bark using a double-boiler or in the microwave.
dip each ball in the melted bark
Dip each cake ball into the almond bark and place it on the wax paper to cool.
add feet immediately so they stick
Before the coating has cooled too much, add the bunny feet so they stick.
add a mini marshmallow tail
Dip the end of a mini marshmallow that has been cut in half into the almond bark and place it above the feet. Allow the coating to set.
add grass and a candy carrot
Place each bunny in a cupcake liner, fill it with green coconut grass and add a candy carrot if desired.
