All you need is a can of sour cherries and granulated sugar . Use a candy thermometer if you have one. If you don't have one, don't worry, you can still make these.

Step 2: bring the cherries and sugar to a boil
Add the entire can of cherries including the juice and the sugar to a small saucepan. Bring the mixture to a boil over med-high heat.

Step 3: reduce and simmer to 225º
Reduce the heat and simmer until the mixture becomes foamy and gets to 225°. You want a honey-like consistency and a dark red color. This took about 35 minutes for me.

Step 4: cool cherries and syrup in a jar
Transfer the cherries into a sealable jar and allow them to cool completely. Store covered in the fridge. Use these cherries for a cocktail garnish, desserts, and more!
