Start with some fresh strawberries.

Start with some fresh fruit like strawberries. Make sure they are clean and the stems are removed.

Add strawberries and sugar to a bowl.

Place the berries in a large mixing bowl and add the sugar. Place the bowl covered in the fridge for at least 12 hours, overnight is best.

Refrigerate to release the juices.

Remove the bowl from the fridge. You will see that the sugar has dissolved and the berries have released a lot of juice.

Mash up the berries to get more juice.

Use a masher to mash up the berries and release even more of that delicious juice.

Strain the syrup from the solids.

Strain the syrup from the solids into a bowl using a fine mesh strainer. Save the solids for things like popsicles, smoothies or cocktails!

Mix the syrup with vinegar.

Add equal amount of the syrup you collected and vinegar to a sealable bottle. Shake to combine and store in the fridge for 4-6 weeks.
