In a large mixing bowl, add the dry ingredients and whisk to combine.

Add the water to the dry ingredients and stir with a spatula to create a very sticky dough.

Add chopped fresh rosemary to the dough and mix in with a spatula.
cover and proof for at least 12 hours
Cover the bowl with plastic wrap and allow to sit for at least 12 hours, overnight is best.

After resting, remove the plastic wrap and prep a counter top with flour and parchment paper.

Place the dough onto the parchment paper with flour and create a ball. Preheat the oven and dutch oven at 450º for 30 minutes.

Place the dough and parchment paper in the dutch oven and bake for 30 minutes with the lid on. Be careful, it's hot!!
remove the lid to create a crust
After 30 minutes, remove the lid from the dutch oven and bake for an additional 15 minutes to get a crispy crust.
