These Bunny Carrot Cake Bites are easy to make with boxed cake and candy decorations. They will be the cutest thing on your Easter table!

Carrot Cake Mixture for Balls

  • cup boxed carrot cake mix
  • 2 large eggs
  • 3 tablespoon vegetable oil
  • 1 cup canned frosting (cream cheese or vanilla flavor)

Almond Bark Coating

  • 12 ounces vanilla almond bark (half of a block package)
  • 1 tablespoon vegetable shortening or vegetable oil (optional, but helps with dipping)

Edible Coconut Grass

  • 1 cup sweetened shredded coconut
  • 8-10 drops green food coloring

Bunny Decorations

  • 1 package candy bunny feet (can sub with fondant)
  • mini marshmallows, cut in half
  • candy carrots (optional)

Instructions

  • Prepare an 8x10 baking dish with non-stick spray or butter. Mix together the carrot cake ingredients in a large mixing bowl. Use your hand mixer to beat together for about 2 minutes. Add the batter to the deep baking pan and bake for 25-30 minutes, until a toothpick comes out clean. Remove the cake from the oven and allow it to cool for about 30 minutes.
  • Once the cake has cooled, add it to a large mixing bowl and crumble using your hands or a spoon (clean hands work best!). Add the frosting and mix into the crumbles until it becomes a dough-like consistency.
  • Place a piece of wax paper on a baking sheet. Take about 1 tablespoon of the cake mixture and roll it into a ball between your hands. TIP: To keep the mixture from sticking to your hands, spray them with non-stick spray or place a little vegetable oil on your hands before rolling the balls. Place each ball on the wax paper. Once all of the balls are rolled, place the baking sheet in the fridge for 1-2 hours to chill.
  • Before removing the cake bites from the fridge, melt the almond bark. You can melt over the stove using a double boiler or you can melt in the microwave in a microwave-safe bowl. Cook in the microwave for 1 minute, remove the bowl, and stir. Continue to melt at 30-second intervals until the bark has melted completely. Add the shortening or oil and stir in.
  • Remove the cake bites from the fridge and dip each one in the almond bark, coating completely. Remove the ball using a spoon and tap on the edge of the bowl to remove excess bark. Place the ball back onto the wax paper to cool/set. Once you have 6 bites coated, take the bunny feet candy and place two on each ball. You want to do this before the coating completely sets or they will not stick (see notes on how to attach the feet if this happens). Once all of the bunny feet have been stuck to the cake bites, continue coating the remainder cake bites.
  • Take each of the marshmallows that have been cut in half, dip the end in the leftover almond bark and stick it to each ball above the feet.
  • Make the edible grass by placing the shredded coconut into a small mixing bowl. Add a few drops of green food coloring and mix immediately using a fork or a spoon. Continuing stirring until all of the green food coloring has been distributed on the coconut. This will take a minute or two. Add more coloring if need, a few drops at a time. A little goes a long way.
  • Place one bunny in a cupcake liner. Place some of the green coconut grass around the edges. If you are using a candy carrot, add that to the grass. Enjoy!

Notes

  • I used a carrot cake mix for Easter since it seemed holiday-appropriate but you can make these cake bites with any flavor of cake you like!
  • To keep the mixture from sticking to your hands while forming the balls, spray them with non-stick spray or place a little vegetable oil on your hands.
  • Adding vegetable shortening or oil to the almond bark is optional, but I find that it smooths out the coating perfectly for dipping.
  • If the bottom of the cake bites has some coating along the bottom edges, don't worry! No one will see it when it is covered by the green coconut grass and no one will care once they taste how delicious these cake bites are!
  • I used Easter-themed cupcake liners since I had them on hand, but you can use any color or pattern you like.
  • This recipe is written to only make about 24 cake bites since I only had a set of 12 bunny feet and also didn't need 48 cake bites in my house 😬. However, you can use the entire box of cake mix, the entire tub of frosting, and the entire package of almond bark if you want or need more cake bites for your celebration.

These Bunny Carrot Cake Bites will last in the fridge in a covered container for 3-4 days.
If the almond bark is too hard to attach to the feet, simply add a little melted almond bark to the back of the feet and place it on top of the cake ball.
