Salad
- 1-2 cups leftover chicken, cut or shredded (amount depends on taste and amount of leftovers)
- 8 cups kale, rinsed and chopped (or use any lettuce of choice)
- ½ cup feta cheese, crumbled
- ½ cup dried cranberries
- ½ cup almonds or walnuts, roasted
Dressing
- ½ cup olive oil
- 2 tablespoons red wine vinegar
- 2 tablespoons onion, minced
- 1 clove garlic, minced
- ½ tablespoon lemon or lime, juiced
- kosher salt to taste
- fresh ground black pepper to taste
Add all of the salad ingredients to a large bowl.
Add all of the dressing ingredients to a sealable container (like a mason jar). Seal the jar and shake vigorously for 20-30 seconds.
Add dressing to the salad, toss together with tongs, and enjoy!
