Ingredients

Salad

  • 1-2 cups leftover chicken, cut or shredded (amount depends on taste and amount of leftovers)
  • 8 cups kale, rinsed and chopped (or use any lettuce of choice)
  • ½ cup feta cheese, crumbled
  • ½ cup dried cranberries
  • ½ cup almonds or walnuts, roasted

Dressing

  • ½ cup olive oil
  • 2 tablespoons red wine vinegar
  • 2 tablespoons onion, minced
  • 1 clove garlic, minced
  • ½ tablespoon lemon or lime, juiced
  • kosher salt to taste
  • fresh ground black pepper to taste

Instructions

  • Add all of the salad ingredients to a large bowl.
  • Add all of the dressing ingredients to a sealable container (like a mason jar). Seal the jar and shake vigorously for 20-30 seconds.
  • Add dressing to the salad, toss together with tongs, and enjoy!
