Instructions
If you are using toasted coconut as a garnish, make that first. See the notes for 3 different ways to toast coconut!
Prepare a cocktail glass by adding agave syrup to the rim using your fingers. Place the shredded coconut into the glass rimmer and dip the glass into the coconut so that it sticks to the edge. Add a fresh ice cube(s) to the glass and set the glass aside.
To a cocktail shaker with fresh ice add the coconut rum, pineapple juice, lime juice, coconut milk, and agave syrup. Secure the lid and shake for 10 seconds or until the outside of the shaker is nice and cold.
Strain the cocktail into the prepared glass and enjoy immediately. Cheers!

How To Toast Sweetened Coconut
Microwave: Place the sweetened shredded coconut onto a microwave-safe plate and microwave for 60 seconds. Remove the plate from the microwave and stir the coconut. Continue microwaving at 30-second intervals, stirring after each interval to even out the cooking. Be careful, the plate and the coconut get hot!Stovetop: Place the coconut in a large pan over low-medium heat, stirring constantly. When the coconut becomes golden brown. it's done. Immediately remove it from the pan so it does not keep cooking.Oven: Spread the coconut out on a baking sheet and bake for 5-10 minutes at 325°F. Check and stir the coconut often so that it does not burn and remove it immediately when it is done so it does not keep cooking.
