A Toasted Coconut Rum Cocktail that is perfect for summer or when you want to feel like you are on vacation. With pineapple juice, lime juice, coconut milk, and rum, this cocktail is like a sophisticated pina colada!

Key Ingredients For This Cocktail
- Rum: To make a Toasted Coconut Rum Cocktail, you are going to need some toasted coconut rum. I used one made by Kula, which is from Hawaii, but is becoming easier to find in liquor stores all over.
- Fruit Juice: You will also need pineapple juice and lime juice for this cocktail. The pineapple juice can be fresh or from a can, but the lime juice should be freshly squeezed for the best-tasting cocktail.
- Coconut Milk: For extra coconut flavor and a touch of creaminess, you will need full-fat coconut milk. Yes, you can use the low-fat version, but again, if you want the best taste and texture possible, opt for the full-fat version. If you prefer a lighter or less creamy cocktail, you can substitute coconut water for coconut milk.
- Sweetener: For sweetness, I used agave syrup which has a deeper, more organic flavor. If you don't have agave syrup, you can use simple syrup instead.

What is the Best Coconut Rum?
One of the most commonly known coconut rums out there is Malibu rum, which is certainly a good one. This cocktail was made with toasted coconut rum made by Kula. It has a little more depth of flavor, in my opinion, and is perfect for this cocktail that is served on the rocks.
I have not tried all of the available coconut rums yet, but I can confidently say the Kula toasted coconut rum is a top choice for a delicious cocktail or straight on the rocks.
There are also other toasted coconut rum options to choose from including Hard Truth, Siesta Key, and Blackheart to name a few. If you can't find toasted coconut rum, you can use coconut rum or your favorite rum.
Tools Needed for this Coconut Rum Cocktail
To make a delicious cocktail that has citrus juice, you will need a cocktail shaker. This one has a built-in strainer to make your bartending tasks even easier.
A fun cocktail glass is also a must when home bartending. I always gravitate to a heavy-bottomed glass for cocktails on the rocks. This set of 4 martini glasses is a great option.
For easy glass garnishing, I love my silicone glass rimmer. It's nice and soft and easy to clean.
How to Toast Sweetened Coconut
You can toast sweetened coconut in the microwave, on the stove, or in the oven. I usually use the microwave because it's quick and easy and there is no need to turn on the stove or the oven.
In The Microwave
Place the sweetened shredded coconut onto a microwave-safe plate and microwave for 60 seconds. Remove the plate from the microwave and stir the coconut. Continue microwaving at 30-second intervals, stirring after each interval to even out the cooking. Be careful, the plate and the coconut get hot!
On The Stove
Place the coconut in a large pan over low-medium heat, stirring constantly. When the coconut becomes golden brown. it's done. Immediately remove it from the pan so it does not keep cooking.
In The Oven
Spread the coconut out on a baking sheet and bake for 5-10 minutes at 325°F. Check and stir the coconut often so that it does not burn and remove it immediately when it is done so it does not keep cooking.

Toasted Coconut Rum Cocktail
Equipment
- 1 glass rimmer (for glass garnish)
Ingredients
- 2 ounces toasted coconut rum (can substitute coconut rum or rum)
- 1 ounce pineapple juice
- 1 ounce freshly squeezed lime juice
- 1 ounce coconut milk (full-fat) (can substitute low-fat)
- ½ ounce agave syrup, plus more for glass rim (can substitute simple syrup)
- toasted coconut (see notes)
Instructions
- If you are using toasted coconut as a garnish, make that first. See the notes for 3 different ways to toast coconut!
- Prepare a cocktail glass by adding agave syrup to the rim using your fingers. Place the shredded coconut into the glass rimmer and dip the glass into the coconut so that it sticks to the edge. Add a fresh ice cube(s) to the glass and set the glass aside.
- To a cocktail shaker with fresh ice add the coconut rum, pineapple juice, lime juice, coconut milk, and agave syrup. Secure the lid and shake for 10 seconds or until the outside of the shaker is nice and cold.
- Strain the cocktail into the prepared glass and enjoy immediately. Cheers!
