    Dragon fruit, also known as pitaya, is a tropical fruit with vibrant pink or yellow skin and a unique appearance. It has a mildly sweet and refreshing flavor, often described as a cross between a pear and a kiwi.

    Yes! Frozen dragon fruit works well in margaritas, which is what I used. Just thaw it before processing it in a food processor or blender.

    Equipment

    • 1 food processor
    • 1 cocktail shaker
    • 1 measuring jigger
    • 1 glass rimmer
    • 1 margarita glass (or cocktail glass of choice)

    Ingredients

    • 2 ounces tequila
    • 2 ounces dragon fruit puree
    • 1 ounce freshly squeezed lime juice
    • ½ ounce triple sec or orange curaceau
    • ½ ounce agave nectar (or simple syrup)

    • lime wedges (for garnish)

    Instructions

    • To make dragon fruit puree, dig out the flash of a fresh dragon fruit or thaw frozen dragon fruit chunks. Place the pulp in a food processor and pulse for about 10 seconds to get a smoother consistency.
    • Place margarita salt in the glass rimmer. Zest a lime and add it to the margarita salt. Use a cut lime wedge to run around the edge of the glass, then dip the edge in the margarita salt to coat the rim. Set aside.
    • Juice the rest of the lime reserving a slice or wedge for garnish.
    • Add fresh ice to the prepared glass.
    • Add more fresh ice to the cocktail shaker along with the tequila, dragon fruit puree, triple sec, agave syrup, and fresh lime juice. Shake for 10-15 seconds until nice and cold.
    • Strain the dragon fruit cocktail into the prepared glass. Garnish with a lime wedge or slice and enjoy immediately.
