Key Ingredients For Passion Fruit Curd

  • Sugar: white sugar adds sweetness and helps to balance the tartness of the passion fruit puree in the curd.
  • Passion fruit puree: The passion fruit puree provides the distinct and tropical flavor that is characteristic of passion fruit curd. You can use fresh puree, frozen puree, or bottled puree.
  • Eggs: whole eggs and egg yolks are included in the recipe to contribute to the overall structure and stability of the curd. The additional egg yolks are used to create a smooth and creamy texture in the curd, while also adding richness.
  • Butter: unsalted butter adds richness and creaminess to the curd, creating a smooth and velvety consistency.

How to Make Passion Fruit Curd in the Microwave

Place the sugar, eggs, egg yolks, passion fruit puree, and salt (if using unsalted butter) in a large mixing bowl and whisk to combine. Cut the butter into small cubes and add it to the bowl. Microwave on HIGH power for 45 seconds.

Remove the bowl and whisk the mixture for 15-20 seconds. Repeat cooking the mixture for 45-second intervals, whisking in between each interval.

It will take 6-7 intervals for the curd to be done. It will slowly start to thicken after each interval. The curd is done when it coats the back of a spoon. You can also check the temperature, the curd is done when it hits 175°F.

Place plastic wrap directly on the top of the passion fruit curd so a film doesn't form on top. Chill the curd in the fridge for at least 1 hour.

Expert Tip

Keep in mind that all microwaves are different, and cook time may vary. I have a 950-watt microwave and I made my curd in 7 intervals at 45 seconds. See below for how to know when your microwaved curd is done.

How to Store Homemade Curd

Store the passion fruit curd in an air-tight container in the fridge. It will last for up to a month.

How do you know When the Microwaved Curd is Done?

There are two ways to know when the curd is finished cooking in the microwave. One is to use a thermometer and check the temperature. When it hits 175°F it's done. You can also tell when the mixture becomes much thicker just like curd and it heavily coats the back of a metal spoon (see pics below).

Where Can You Find Passion Fruit?

Sometimes you can find fresh passion fruit in the grocery store or puree in the frozen section. I've had the best luck at my local Mexican Grocery Store for whole fruit, but I've also heard they can be found at Asian specialty grocery stores. Passion fruit pulp or puree is also easy to find online.

How To Make Passion Fruit Puree

If you are lucky enough to have fresh, ripe passion fruit you can make your own puree. Cut the fruit in half and dig out the middle with a spoon.

Add the fruit to a food processor or blender and give it a quick pulse to remove more of the pulp and juice from the seeds. Strain the mixture into a bowl and you have your puree.

If you purchase frozen passion fruit, once it thaws, it will be in a puree form. If there are chunks of fruit, give it a quick zip in a food processor or blender.

Equipment
