Instant Pot Mexican Shredded Beef

It’s no secret that I LOVE Mexcian food. When people ask me the question “If you could only eat one thing for the rest of your life, what would it be?” my answer is always “Something Mexican”!

One of the best things about Mexican cuisine is that there are so many possibilities of dishes to make once you have your meat. The Instant Pot Shredded Beef recipe will make dinner or serving a crowd so much easier. The other great thing about Mexican food is you can make it your own by adding extra spice, vegetables or whatever you like.

This recipe has canned chipotles in it. I don’t like super spicy foods and these add a wonderful smokiness and flavor without the spice. If you do want extra spice, try adding a fresh cut jalapeno or serrano pepper. I always start with less spicy because, again, I don’t like spice and my toddler doesn’t either. You can always add, but you can’t take away.

Instant Pot Mexican Shredded Beef

Equipment

  • Instant Pot/Pressure Cooker

Ingredients

  • 1 tbsp olive oil
  • 1-2 lbs stew meat or beef roast
  • 3 cloves garlic
  • 1/2 small onion, diced
  • 1/2 cup beef broth
  • 1 tbsp ground cumin
  • 1/8 tspn ground cloves
  • 2 bay leaves
  • 2-3 tbsp canned chipotles
  • 1 tspn salt
  • 1/2 tspn ground pepper

Instructions

  • Make sure meat is cubed and dry by patting with paper towels.

  • Turn Instant Pot to "Saute" mode and brown meat for about 10 minutes.

  • Once the meat is nice and brown, add all remaining ingredients to the pot. Lock lid in place and close steam vent. Set to Pressure Cook on HIGH for 30 minutes.
  • Once the timer goes off, allow the pressure to release naturally before removing the lid. This step is important to help with the tenderness of the beef and will also make it easier to shred.
  • After all the pressure has released, remove the bay leaves and shred the meat with just the use of tongs. Dinner is served!
