Why I Love This Recipe
These Bunny Cake Pops are one of my favorite Easter treats to make every year! They are just like a cake pop but in a small bite form with the cutest bunny butts around.
The bunnies dig in edible coconut grass to make these little bite-sized desserts as real as they can get. Add a candy carrot for the perfect final touch.

Key Ingredients Needed to Make Bunny Cake Pops
Boxed Cake Mix: I use boxed carrot cake mix for this recipe but you can use any cake flavor you want. It's a convenient option because all you have to do is follow the instructions on the back of the box!
Canned Frosting: Canned frosting also makes this recipe easy. You can use cream cheese frosting or vanilla frosting.
Vanilla Almond Bark: Vanilla almond bark is a type of candy coating found in most grocery stores. If you don't have almond bark, you can use melting candy found at craft stores or white chocolate chips.
Sweetened Shredded Coconut and Green Food Coloring: Sweetened shredded coconut and green food coloring are used for the grass decoration. It's optional but adds such a fun touch to these treats.
Candy Bunny Feet: Candy bunny feet are usually found in most grocery stores or craft stores around easter time or you can find them online. If candy bunny feet are not available, fondant can be used as a substitute for shaping and decorating bunny feet.
Mini Marshmallows: Mini marshmallows are for the tail. If you only have large marshmallows, just cut them into smaller pieces to get the perfect size for your cake pops.
Candy Carrots: Candy carrots are optional as well, but also add the perfect final touch to this recipe.
How to Make Easter Cake Pops
Step 1: Bake a carrot cake from a boxed mix using half of the mix. Allow the cake to cool.
Step 2: Crumble the cake with your hands in a large mixing bowl. Add 1 cup of frosting to the cake crumbles and mix everything together.
Step 3: Roll the cake mixture into balls and place on wax paper. Chill the cake balls in the fridge for 1-2 hours.
Step 4: Melt the almond bark using a double-boiler or in the microwave. Dip each cake ball into the almond bark and place it back on the wax paper to cool.
Step 5: Before the coating has cooled too much, add the bunny feet so they stick. Once all of the balls have been coated, dip the end of a mini marshmallow that has been cut in half in the remaining almond bark, place it above the feet, and allow the coating to set.
Step 6: Mix the shredded coconut and the green food coloring in a bowl until the coconut is fully coated and green. Place each bunny in a cupcake liner, fill it with green coconut grass, and add a candy carrot if desired.
What Candy Decorations to Use
Below is a photo of the candy decorations I used. The carrots are made by Wilton and the bunny feet are made by the house brand at Kroger grocery stores.
If you can't find these decorations, you can also use fondant or marshmallows to make the feet and the carrots or skip the carrots. Your Bunny Butt Cake Bites will still be adorable and delicious! Expert Tips for Easter Bunny Cake Bites
- I used a carrot cake mix for Easter since it seemed holiday-appropriate but you can make these cake bites with any flavor of cake you like!
- To keep the mixture from sticking to your hands while forming the balls, spray them with non-stick spray or place a little vegetable oil on your hands.
- Adding vegetable shortening or oil to the almond bark is optional, but I find that it smooths out the coating perfectly for dipping.
- If the bottom of the cake bites has some coating along the bottom edges, don't worry! No one will see it when it is covered by the green coconut grass and no one will care once they taste how delicious these cake bites are!
- I used Easter-themed cupcake liners since I had them on hand, but you can use any color or pattern you like.

Bunny Cake Pops
Equipment
- 2 large mixing bowls
- 8x10 deep baking pan (or similar size)
- double boiler set up or microwave-safe bowl
- long spoon for dipping
Ingredients
Carrot Cake Mixture for Balls
- 1½ cup boxed carrot cake mix
- 2 large eggs
- 3 tablespoon vegetable oil
- 1 cup canned frosting (cream cheese or vanilla flavor)
Almond Bark Coating
- 12 ounces vanilla almond bark (half of a block package)
- 1 tablespoon vegetable shortening or vegetable oil (optional, but helps with dipping)
Edible Coconut Grass
- 1 cup sweetened shredded coconut
- 8-10 drops green food coloring
Bunny Decorations
- 1 package candy bunny feet (can sub with fondant)
- mini marshmallows, cut in half
- candy carrots (optional)
Instructions
- Prepare an 8x10 baking dish with non-stick spray or butter. Mix together the carrot cake ingredients in a large mixing bowl. Use your hand mixer to beat together for about 2 minutes. Add the batter to the deep baking pan and bake for 25-30 minutes, until a toothpick comes out clean. Remove the cake from the oven and allow it to cool for about 30 minutes.
- Once the cake has cooled, add it to a large mixing bowl and crumble using your hands or a spoon (clean hands work best!). Add the frosting and mix into the crumbles until it becomes a dough-like consistency.
- Place a piece of wax paper on a baking sheet. Take about 1 tablespoon of the cake mixture and roll it into a ball between your hands. TIP: To keep the mixture from sticking to your hands, spray them with non-stick spray or place a little vegetable oil on your hands before rolling the balls. Place each ball on the wax paper. Once all of the balls are rolled, place the baking sheet in the fridge for 1-2 hours to chill.
- Before removing the cake bites from the fridge, melt the almond bark. You can melt over the stove using a double boiler or you can melt in the microwave in a microwave-safe bowl. Cook in the microwave for 1 minute, remove the bowl, and stir. Continue to melt at 30-second intervals until the bark has melted completely. Add the shortening or oil and stir in.
- Remove the cake bites from the fridge and dip each one in the almond bark, coating completely. Remove the ball using a spoon and tap on the edge of the bowl to remove excess bark. Place the ball back onto the wax paper to cool/set. Once you have 6 bites coated, take the bunny feet candy and place two on each ball. You want to do this before the coating completely sets or they will not stick (see notes on how to attach the feet if this happens). Once all of the bunny feet have been stuck to the cake bites, continue coating the remainder cake bites.
- Take each of the marshmallows that have been cut in half, dip the end in the leftover almond bark and stick it to each ball above the feet.
- Make the edible grass by placing the shredded coconut into a small mixing bowl. Add a few drops of green food coloring and mix immediately using a fork or a spoon. Continuing stirring until all of the green food coloring has been distributed on the coconut. This will take a minute or two. Add more coloring if need, a few drops at a time. A little goes a long way.
- Place one bunny in a cupcake liner. Place some of the green coconut grass around the edges. If you are using a candy carrot, add that to the grass. Enjoy!
