Shamrock Rice Krispie Treats

Make these Shamrock Rice Krispie Treats for your St. Patrick's Day celebration or just for fun! They are easy to make and kids and adults will love to decorate and eat them. These green desserts are perfect for a school treat, the office, or a party!

Why You'll Love This Recipe

These Shamrock Rice Krispie Treats are perfect for St. Patrick's Day and are so fun to make! My recipe uses lime and lemon-flavored marshmallows for a spin on the original recipe, but you can always use regular marshmallows instead.

How To Make Shamrock Rice Krispie Treats

Step 1: Prepare a 9x13 pan with non-stick spray. Add the marshmallows and stir until fully melted in the butter.

Step 2: Stir in the green food coloring. Remove the pot from the heat and stir in the rice cereal. Add to the prepared dish and press into the pan with your fingers.

Step 3: Place the pan in the fridge for 10 minutes to cool. Turn the pan upside down on top of a cutting board or counter. Use the cookie cutter to cut out as many shamrocks as you can.

Step 4: Use gel frosting and sprinkles to decorate the shamrocks with fun faces. Enjoy!

Expert Tips for Making Rice Cereal Shamrocks

  • You can use regular marshmallows instead of lime and lemon-flavored marshmallows. Below is a photo of the marshmallows I used. You do have to separate the flavors, but my son and I had fun doing it!😁 bag of fruit marshmallows
  • If you want your treats to have more flavor but don't have flavored marshmallows, try adding lime extract, almond extract, or vanilla extract!
  • Make sure you use non-stick spray on your pan so the treats don't stick!
  • You can also spray your hands with non-stick spray before pressing the treats into the pan so that they are nice and compact. This will make cutting out the shapes much easier.
  • Get creative with your decorating and most importantly, have fun!

Equipment

  • large pot/saucepan
  • 9x13 pan
  • non-stick spray
  • wax paper

Ingredients

Rice Cereal Treats

  • 3 tablespoon butter
  • 6 cups rice cereal
  • 4 cups lime and lemon marshmallows *see notes
  • green food coloring
  • sprinkles for decorating
  • green gel frosting for decorating

Instructions

  • Prepare a 9x13 pan with non-stick spray. Melt the butter in a large pot over medium heat. Add the marshmallows and stir until fully melted in the butter. Stir in the green food coloring. Remove the pot from the heat and stir in the rice cereal. Add to the prepared dish and press into the pan as much as you can. Place the pan in the fridge for 10 minutes to cool.
  • Turn the pan upside down on top of a cutting board or counter. Use the cookie cutter to cut out as many shamrocks as you can.
  • Use gel frosting and sprinkles to decorate the shamrocks with fun faces. Enjoy!

Notes

  • You can use regular marshmallows instead of lime and lemon-flavored marshmallows. You will need two bags and you have to separate the flavors, but my son and I had fun doing it!😁
  • These treats can be stored in an air-tight container for 3-4 days.
