Why I Love This Recipe
I love strawberries and I love my air fryer so naturally, I had to make a recipe that used both. These Air Fryer Strawberry Turnovers are so cute and delicious that you are going to want to make them all the time!
You can make these hand-held treats with homemade pie crust like my Easy All-Butter Pie Crust or store-bought. You can also make these in the oven if you don't have an air fryer.

Key Ingredients Needed for This Recipe
Pie Crust (Homemade or Store-bought): Pie crust serves as the flaky and buttery pastry that encases the strawberry filling. Whether you choose to make it from scratch or use a store-bought version, the pie crust adds a delicious texture to the turnovers.
Fresh Strawberries: Fresh strawberries are the star ingredient, providing a burst of sweet and juicy flavor. They give the turnovers their fruity filling and vibrant color.
Lemon Zest: Lemon zest provides a subtle citrusy note and fresh element that brightens the flavor of the turnovers and enhances the overall taste profile.
Cornstarch: Cornstarch acts as a thickening agent in the strawberry filling, helping to bind the juices and create a luscious consistency.
Egg: A beaten egg is used as an egg wash to give the turnovers a golden and shiny crust when air-fried and adds to the overall texture.
Coarse Sugar: Coarse sugar is sprinkled on top of the turnovers before baking to add a delightful crunch and a hint of sweetness creating a caramelized and slightly crunchy crust.
How to Make Strawberry Turnovers in an Air Fryer
Roll out the pie dough about ⅛" thick. Cut out 12 dough rounds.
Add the chopped strawberries, sugar, vanilla, lemon zest, and cornstarch to a mixing bowl and gently stir to combine. Spoon 1-2 tablespoon of filling on each round.
Brush the edges of the round with egg wash and fold it in half. Use a fork to crimp the edges closed. Repeat with all of the rounds. Use a sharp knife to cut 3 slits in the top of the turnovers. Brush the egg wash on top of the turnovers and sprinkle with sugar.
Preheat the air fryer to 350°F for a few minutes. Spray the air fryer basket with nonstick spray. Place the turnovers (5-6) in the basket and air fry for 10 minutes or until the crust is golden brown.
Which Air Fryer I Use
There are so many different types of air fryers out there now, and each one is slightly different. There are countertop air fryers, air fryer ovens, and air fryer attachments to name a few.
I use a COSORI Air Fryer (shown below) and I love it. It does take up some counter space so make sure you have room for it. If you want a smaller option, check out the COSORI Small Air Fryer or an attachment for the Instant Pot.
Whatever air fryer you use, always remember to follow the instructions from your manufacturer and remember that every air fryer will cook a little differently so adjust accordingly.
No Air Fryer? No Problem!
If you don't have an air fryer, you can still make these strawberry turnovers. Assemble the turnovers as described in the recipe card.
Preheat the oven to 350 and place parchment paper on a baking sheet. Place the turnovers on the parchment paper and bake for 30-35 minutes or until the crust is golden brown.

I love this adjustable rolling pin because it takes the guesswork out of rolling out dough to a certain thickness. And you will need a round biscuit cutter to make your shapes (or you can use a round cup).
How to Store Strawberry Turnovers
Store any leftover pastries in a sealed container in the fridge. You can also freeze them for up to 3 months.
Expert Tips for Making Hand Pies in the Air Fryer
- When you are crimping these small treats some of the filling will most likely leak out. Don't panic, as long as most of it stays in the middle and you get a good seal, there will be no issues.
- Don't be afraid to adjust the amount of sugar in the filling based on how sweet or tart your strawberries are.
- Since you brush the turnovers with egg wash, there is no need to spray them with non-stick spray as you would with other air fryer recipes. But don't forget to spray the basket so the pies don't stick to it!
- Preheating the air fryer can make a difference. Preheating will help with even cooking and less wait time in the beginning. If you don’t preheat, the first batch will cook differently than the next, etc.
- Tongs are also very useful since the air fryer gets HOT! Always be careful and use a utensil.
- Remember to always read the instruction manual and follow what your manufacturer recommends.

Air Fryer Strawberry Turnovers
Equipment

Ingredients
- 1 all-butter pie crust (homemade or store-bought)
- ¾ cup strawberries, finely chopped
- 2 tablespoon sugar
- ½ teaspoon vanilla
- zest of half a lemon
- 1 tablespoon cornstarch
- 1 egg, beaten
- coarse sugar for sprinkling (I used crystal sprinkles)
Instructions
- Roll out the pie dough on a floured surface to about ⅛" thick. Using a round cookie cutter, cut out as many dough rounds as possible. If needed, take the scraps and form a new ball. Roll out the dough one more time and cut out more rounds until you have 12 total.
- Add the chopped strawberries, sugar, vanilla, lemon zest, and cornstarch to a mixing bowl and gently stir to combine. Spoon 1-2 tablespoon of filling on each round.
- Brush the edges of the rounds with egg wash and fold in half. Use a fork to crimp the edges closed. Use a sharp knife to cut 3 slits in the top of the turnovers. Brush the egg wash on the top of the turnovers and sprinkle with sugar.
- Preheat the air fryer at 350°F for a few minutes. Spray the air fryer basket with nonstick spray. Place 5-6 turnovers in the basket (make sure there is room around each one for the hot air to circulate) and air fry for 10 minutes or until the crust is golden brown. Use tongs to remove the pastries and place them on a wire rack or plate to cool. Repeat with remaining pies.
