Cinnamon Simple Syrup
This Cinnamon Simple Syrup is the perfect addition to cocktails, mocktails, desserts, and more! With only 3 ingredients you can make this fragrant and delicious syrup to put on everything!

This Cinnamon Simple Syrup is easy to make and you are going to want to pour it in and on everything! Not only will it make your house smell amazing when you are making it, but the aroma also gets locked into this syrup and tastes just like a cinnamon stick!
This recipe is a small batch recipe so you won’t end up with a huge amount of syrup. However, if you want to make more, this recipe can easily be doubled or tripled.
How to Make Cinnamon Simple Syrup
- Place the water and cinnamon sticks in a small saucepan over medium-high heat and bring to a boil. Lower the heat and simmer for 10 minutes.
- Remove the cinnamon sticks and add the sugar. Stir to combine and bring the mixture to a boil again. Boil for 2 minutes and then remove from the heat.
- Allow the syrup to cool before placing it in a sealable bottle or jar. Store the syrup in the fridge for 2-3 weeks.
Can I use ground cinnamon for this recipe?
You can use ground cinnamon to make a simple syrup, however, not all of the ground cinnamon will be strained out of the mixture. Some of the ground cinnamon will be left in the syrup and if you are ok with that, then it’s no problem. Just substitute the cinnamon sticks with 1/2 teaspoon ground cinnamon.
What to use this Homemade Syrup for
There are so many things you can use this syrup for, here are a few ideas:
- Make a cocktail like my Apple Cider Martini or Cinnamon Grapefruit Tequila Sour
- Add to apple cider
- Use this syrup in coffee drinks, hot or cold
- Sweeten your tea with this cinnamon syrup
- Pour over pancakes or waffles
- Add to whipped cream or frosting
- Pour over ice cream
Save those Cinnamon Sticks!
Don’t toss those cinnamon sticks that are removed after boiling. They can be used for teas, ciders, and more! Although some of the flavors will, of course, go into the syrup, you can still get some flavor from those sticks. They also make a perfect cocktail or mocktail garnish. Just let them dry completely and keep them in a sealable bag in the fridge until you are ready to use them.
