Instant Pot Mashed Potatoes with Garlic Herb Butter

Ingredients Needed for Instant Pot Mashed Potatoes with Garlic Herb Butter
- 5 lbs potatoes
- water
- salt
- butter
- garlic cloves
- thyme
- rosemary
- sage
- sour cream

How to Make Garlic Herb Mashed Potatoes in an Electric Pressure Cooker
- Place the potatoes, water, and salt in the Instant Pot. Make sure the potatoes are completely covered, you can add more water if needed. Place the lid on the Instant Pot and cook on STEAM for 12 minutes. When finished cooking, carefully quick-release the steam and then drain the potatoes.
- While the potatoes are cooking, melt the butter in a small saucepan over medium heat. Once melted, add the garlic thyme, rosemary, and sage and cook for 15 minutes over low-medium heat. Remove the butter from the heat and remove the herbs and garlic.
- Keep the Instant Pot on warm and mash the cooked potatoes with your masher. I like my potatoes a little chunky but you can mash as much as you would like. Add the sour cream and herb butter and stir in with a rubber spatula or large spoon. Add salt to taste.

Tips on Making Mashed Potatoes in the Instant pot
- You can make these ahead of time! Make these mashed potatoes up to 2 days ahead of time and reheat when you are ready to serve them! Perfect for Thanksgiving dinner planning.
- Leave some of the potato skins on for extra texture in your mashed potatoes.
- If you want chunky mashed potatoes, be careful not to over mash. If you want smooth mashed potatoes. use an immersion blender or hand mixer to get them nice and smooth and creamy.
- Are the mashed potatoes too dry? Add some milk.

- salt to taste

Be careful, it's hot!
