How to Make This Recipe

Step 1: Wash and peel the potatoes and place them in the Instant Pot. You can remove all of the skin or leave some on for texture.

Step 2: Add potatoes, water, and salt to the Instant Pot, ensuring everything is fully covered. Cook on high for 12 minutes Quickly release the steam and then carefully drain the water from the pot.

Step 3: Melt the butter in a small saucepan over medium heat. Add the garlic thyme, rosemary, and sage and cook for 15 minutes over low-medium heat. Take the butter off the heat and remove the herbs and garlic.

Step 4: With the Instant Pot on warm, mash the potatoes to your desired texture using a masher or hand mixer. Stir in the sour cream, herb butter, and salt to taste.

    Expert Tips for Making Mashed Potatoes in the Instant Pot

    • You can make these ahead of time! Make these mashed potatoes up to 2 days ahead of time and reheat them when you are ready to serve them! Perfect for Thanksgiving dinner planning.
    • Leave some of the potato skins on for extra texture in your mashed potatoes.
    • If you want chunky mashed potatoes, be careful not to over-mash them. If you want smooth mashed potatoes. use an immersion blender or hand mixer to get them nice, smooth, and creamy.
    • Are the mashed potatoes too dry? Add some milk.

    Instant Pot Mashed Potatoes with Garlic Herb Butter

    Equipment

    • Instant Pot or electric pressure cooker
    • potato masher
    • small saucpan

    Ingredients

    Potatoes

    • 5 pounds potatoes, washed and peeled
    • 6 cups water
    • 2 teaspoons kosher salt

    Butter and Herb Mix

    • 1 cup butter (2 sticks)
    • 4 cloves garlic, smashed
    • 2 sprigs thyme
    • 2 sprigs rosemary
    • 2 sprigs sage

    Other Ingredients

    • 1 cup sour cream
    • salt to taste

    Instructions

    • Place the potatoes, water, and salt in the Instant Pot. Make sure the potatoes are completely covered, you can add more water if needed. Place the lid on the instant pot and cook on STEAM for 12 minutes. When finished cooking, carefully quick-release the steam, drain the potatoes and then place the pot back into the Instant Pot. Be careful, it's hot!
    • While the potatoes are cooking, melt the butter in a small saucepan over medium heat. Once melted, add the garlic thyme, rosemary, and sage and cook for 15 minutes over low-medium heat. Remove the butter from the heat and remove the herbs and garlic.
    • Keep the Instant Pot on warm and mash the cooked potatoes with your masher. I like my potatoes a little chunky but you can mash as much as you would like. Add the sour cream and herb butter and stir in with a rubber spatula or large spoon. Add salt to taste.
