Why I Love This Recipe
Dehydrated Strawberries, also known as strawberry chips, are such a delicious treat and there are so many ways you can use them. They are also really easy to make and you can make them in a dehydrator or your oven just like my Dehydrated Cherry recipe and my Dehydrated Tomato recipe.
Fully dehydrated strawberries will last a few weeks or you can also freeze them for up to 3 months. Make these dried strawberries and you can have a healthy and delicious snack on hand at all times similar to my Dried Mangos and Dried Pears.
How to Make Dehydrated Strawberries
Step 1: Wash, dry, and hull the strawberries. Slice each strawberry into thin slices using a sharp knife.
Step 2: Place each piece on the dehydrator rack until the entire level is full. Make sure to leave room around each one so that the air can circulate them.
Step 3: Place the lid on the dehydrator and set it to 135º. It will take anywhere from 6-10 hours for the strawberries to fully dehydrate.
Step 4: Ensure the fruit has cooled completely before storing. They will firm up a bit when cool.
How to Store Dried Fruit
Ensure the fruit has cooled completely before storing. Store them in a sealable container in a cool dark place for a few weeks or freeze them for later for up to 3 months.
How to Dry Strawberries in the Oven
After cleaning and slicing the strawberries, arrange them on a baking sheet with parchment paper. Bake at 200º for 2-4 hours, flipping every hour. Start checking them after 2 hours to see how they are doing. You want them to be slightly rubbery, which will lessen once they cool off.
What to Do with Dehydrated Strawberries
Here are some ideas on how to enjoy dried strawberries:
- Eat them plain for a delicious healthy snack
- Use them as a cocktail garnish
- Cut up into small pieces and put inside baked goods
- Place on top of baked goods
- Add to your favorite sangria
- Use them as a cupcake topper
- Use them to flavor water or iced tea
What Dehydrator I Use
I have a Nesco dehydrator that I use all the time. I’ve had it for quite a few years and it has lasted a long time. I like it because it’s light and easy to clean. The only negative I can think of is that it does take up some space because it’s bulky.
There are quite a few options for dehydrators out there, some are even bigger if you want to dehydrate a ton of food at once. The one shown below is a great beginner option.

Dehydrated Strawberries
Equipment
- sharp knife
Ingredients
- 1 pound strawberries
- lemon juice or sugar (optional topping)
Instructions
- Wash, dry, and hull (remove the stems) the strawberries. Slice each strawberry into thin slices using a sharp knife, about ⅛" thick. You want the slices to be as similar in size and thickness as possible so that they all dry at the same rate.
- Once you have all of your strawberries sliced, place each piece on the dehydrator rack until the entire level is full. Fill all of the levels with your strawberry slices, making sure to leave room around each one so that the air can circulate them. You can sprinkle them with sugar or lemon juice if desired, but it's not necessary.
- Place the lid on the dehydrator and set it to 135º. It will take anywhere from 6-10 hours for the strawberries to fully dehydrate. Start checking them around 6 hours. You want them to be just a little rubbery but not wet. They will become crispy once they cool. You may need to remove some smaller pieces first and keep dehydrating any larger pieces a little longer.
- Store them in a sealable container in a cool dark place or freeze them for later.

Notes
- Times will vary depending on how thin the slices are, the climate, the outside and inside temperature at the time, and your dehydrator.
- Always read the manual for your dehydrator and follow all safety recommendations.

This is such a brilliant idea for a snack I really need to get a dehydrator. I’ve been saying this for ages. Meanwhile do you think I could make them in the oven?
Emily says
Absolutely, just put them on a baking sheet with parchment paper (or they will stick!) and place in the oven at 200º for a few hours. Check every 2 hours and flip halfway through if you'd like. Enjoy!
