Key Ingredients for Air Fryer Pop Tarts
- Fresh Berries - Blueberries, Raspberries, Huckleberries, or Blackberries! They add a burst of natural sweetness and vibrant color to your pop tart filling.
- Puff Pastry - Puff pastry is the base of the pop tarts. It's made with layers of butter and dough, which create a flaky and crispy texture when baked. Store-bought puff pastry is convenient, but homemade can offer a personal touch.
- Powdered Sugar- Powdered sugar (a.k.a. confectioners sugar or icing sugar) is used to make the sweet glaze that is drizzled over the baked pop tarts for added sweetness and decoration.
- Berry Syrup - Berry syrup is extracted from the cooked berry compote and is used as the glaze for the pop tarts.

What Berries to Use for The Filling
The berries in the compote filling can be fresh or frozen or a combination of both. For my pop tarts, I used fresh blueberries, frozen raspberries, and huckleberries.
When berries aren't in season, you can usually find a frozen bag of berries with several types. You also don't have to have 3 berries, you can just use your favorite!
Step 1: Place the berries and sugar in a saucepan over medium-high heat and bring to a boil while stirring and smashing the berries. Add the cornstarch and stir it in. Allow the mixture to bubble for about a minute and then remove it from the heat.
Step 2: Roll out the sheet of puff pastry into a large rectangle. Cut it into 8 smaller rectangles of equal size.
Step 3: Place about 2 tablespoon of berry compote onto one side of a rectangle.
Step 4: Fold over the other half of the pastry and score it with a fork around the edges and poke a few holes with a fork in the top of the pastry. Repeat with the rest of the puff pastry rectangles.
Step 5: Spray the air fryer basket with non-stick spray and place the pastries in the basket. Cook at 350°F for 10-12 minutes. Remove the pastries from the air fryer and allow them to cool on a rack or plate.
Step 6: In a medium bowl add the powdered sugar, berry sauce from the compote, and lemon juice and whisk together until smooth. Drizzle the frosting on top of the cooked pop tarts and add sprinkles on top.
Types of Air Fryers
There are so many different types of air fryers out there now, and each one is slightly different. There are countertop air fryers, air fryer ovens, and air fryer attachments to name a few.
I have the COSORI Air Fryer and I love it. It does take up some counter space so make sure you have room for it. If you want a smaller option, check out the COSORI Small Air Fryer or an attachment for the Instant Pot.
Expert Air Fryer Tips
- Make sure you don't overcrowd the air fryer basket so that the hot air can circulate all around the pop-tarts.
- If a little filling leaks out the side, don't panic, the pop-tarts will still taste great!
- Non-stick spray is your friend! You always want to spray the basket and food before air frying (unless otherwise noted) so that nothing sticks to the basket and the outside of your food gets nice and crispy.
- Tongs are also your friend for pulling out hot food from an air fryer. Always be careful and use a utensil because it’s hot in there!
- Store any leftover compote and syrup in a sealed container in the fridge. Use it as a topping for ice cream, pancakes, cereal, etc. You can also use it for a refreshing drink with sparkling water or add it to a cocktail!
- Remember always to read the instruction manual and follow what your manufacturer recommends.
Recipe FAQs
Yes, you can use frozen berries for the filling. Keep in mind that frozen berries might release more liquid, so you might need to adjust the amount of cornstarch to thicken the filling.
While puff pastry is used for this recipe, you can experiment with other types of pastry dough like pie crust or even crescent roll dough for a different texture and flavor.
Be sure to leave a border around the edges when placing the filling on one puff pastry sheet. Then, when you place the second sheet on top, press the edges firmly together to seal. Crimping the edges with a fork will further secure the seal.
Store any leftover pop tarts in an airtight container at room temperature for a day or two. If you need to store them longer, consider refrigerating them, but note that the pastry might lose some crispness.
Yes, you can reheat leftover pop tarts in the air fryer at a lower temperature for a few minutes to regain some of their warmth and texture.
