Why I Love This Recipe
I love these Air Fryer Zucchini Pizza Bites because they offer a healthier alternative to traditional pizza bites while still providing the delicious flavors of pizza. The air fryer crisps up the zucchini perfectly, creating a satisfyingly crunchy exterior, and the toppings of sauce, cheese, and pepperoni.
I also love this recipe because it's kid-friendly, like my Taco Pizza Recipe and my Air Fryer Southwest Egg Rolls. These pizza bites are guilt-free and the perfect appetizer or light meal.
Ingredients Needed to Make This Recipe
You only need a handful of ingredients to make these low-carb pizza bites. Of course, you will need fresh zucchini. You will also need your favorite pizza sauce, shredded mozzarella cheese, and the toppings of your choice.
My bites were made with pepperoni and black olive since it's my family's favorite, but you can use any pizza topping you enjoy.
How to Make Low-Carb Zucchini Pizzas
Slice the zucchini into ¼" rounds and sprinkle with salt and pepper. Preheat your air fryer to 350°F for 2 minutes.
Spray the air fryer basket with non-stick spray and carefully place as many zucchini slices as you can fit in the basket. Cook at 350° for 4 minutes.
Using tongs, remove each zucchini slice from the air fryer. Top each slice with pizza sauce, cheese, pepperoni, and olives.
Place the slices back in the air fryer and cook at 350°F for another 4-5 minutes. Remove from the air fryer using the tongs and allow the pizza bites to cool before enjoying.

The great thing about mini zucchini pizza bites is that the toppings are easy to customize to your liking. Here are a few more topping ideas. Of course, you will have to make the toppings smaller in some cases to fit on the zucchini.

Which Air Fryer I Use For This Recipe

You could also check out this air fryer that goes on your counter or this air fryer that is more like a toaster oven. Lastly, ovens are now being made with an air frying function which is very cool...and very expensive.
Air Fryer Zucchini Pizza Bites
Ingredients
