How to Make Shrub Salad Dressing

Most salad dressings are pretty easy to make and this one is no exception. There are two ways you can make this strawberry vinaigrette. First, put the lime juice, shrub, and shallot into a small bowl and whisk together. Vigorously whisk in the oil in a stream. Add the salt and pepper and stir in. Or you can use a salad dressing shaker or a jar with a lid and shake everything together. Below is a picture of my favorite salad shaker from OXO. It’s a perfect size and pours perfectly.

What is Shrub?

A “shrub” (a.k.a. drinking vinegar) is basically an old way of preserving. Shrubs are typically a fruit and/or herb-infused syrup, made with fresh ingredients, then fortified with some type of vinegar. The word “shrub” is derived from the Arabic word “sharbah,” which translates to “drink.” Back in the day, people from the 16th-18th century drank shrubs to prevent scurvy. Today, shrubs are infused with all different flavor combinations and some even use them for health benefits. There are some shrubs you can find in stores, also called drinking vinegar.
