Why I Love This Recipe

This Strawberry Shrub Vinaigrette Salad Dressing recipe is my absolute favorite dressing! It has the perfect combination of tangy, sweet, salty, and fruity to make any salad even better. I love this dressing on my Strawberry Butter Lettuce Salad, but you can put this vinaigrette on any salad you want!

What is a Shrub?

A “shrub” (a.k.a. drinking vinegar) is basically an old way of preserving. Shrubs are typically a fruit and/or herb-infused syrup, made with fresh ingredients, and then fortified with some type of vinegar.

The word “shrub” is derived from the Arabic word “sharbah,” which translates to “drink.” Back in the day, people from the 16th-18th centuries drank shrubs to prevent scurvy. Today, shrubs are infused with all different flavor combinations and some even use them for health benefits.

There are some shrubs you can find in stores, also called drinking vinegar. Check out my recipe for Fresh Fruit Shrub and you can easily make your own!

Key Ingredients and Substitutions For This Recipe

  • Freshly Squeezed Lime Juice - Freshly squeezed lime juice adds a tangy and citrusy flavor to the dressing that complements the sweetness of the strawberries. You can substitute lemon juice if desired.
  • Strawberry Shrub - A strawberry shrub is a type of fruit-based vinegar syrup made with strawberries, sugar, and vinegar. It adds a unique and vibrant fruity flavor to the dressing.
  • Shallot - Shallots bring a mild and savory flavor to the dressing and add depth and complexity, enhancing the overall taste profile of the dressing. You can substitute onion if needed.
  • Extra-Virgin Olive Oil: Extra-virgin olive oil serves as the base of the dressing, providing a smooth and rich texture. It adds a fruity and slightly peppery note, enhancing the flavors of the other ingredients.

How to Make Shrub Salad Dressing

Most salad dressings are pretty easy to make and this one is no exception. There are two ways you can make this strawberry vinaigrette.

One option is to put the lime juice, shrub, and shallot into a small bowl and whisk together. Vigorously whisk in the oil in a stream, then add the salt and pepper.

Or you can use a salad dressing shaker or a jar with a lid and shake everything together. Below is a picture of my favorite salad shaker from OXO. It's a perfect size and has a pour spout for easy serving.

Equipment

Ingredients

  • 1½ tablespoons freshly squeezed lime juice (you can also use lemon)
  • 2 tablespoons strawberry shrub
  • 1 tablespoon shallot, finely minced (you can also use onion)
  • ¼ cup extra-virgin olive oil
  • ⅛ teaspoon kosher salt
  • 1 pinch freshly ground black pepper

Instructions

  • Put the lime juice, shrub, and shallot into a small bowl and whisk together. Vigorously whisk in the oil in a stream. Add the salt and pepper and stir in.
  • Alternatively, you can add all of the ingredients to a salad dressing shaker or a jar with a lid and shake vigorously until combined.
